I really got into the whole gluten free thing with these cupcakes. I think that this recipe really adapted well to being gluten free. After all one expects chocolate cupcakes to be dense and rich. The cupcakes themselves are also egg and dairy free - the glaze itself has dairy. I suppose you could do the vegan thing if you wanted to. I didn't.
Oh, I discovered that tapioca flour makes a difference!
Spicy Gluten Free Chocolate Cupcakes
1 1/4 cups rice flour
1/4 tapioca flour
1/3 cup cocoa powder
1 tsp baking soda
½ tsp salt
1 cup sugar
½ cup vegetable oil
1 cup cold water
1 vanilla bean, seeds scraped
1½ tsp ground cinnamon1
½ tsp ground sichuan pepper
¼ tsp ground ginger
1/4 ground cloves
1/2 tsp ground pink peppercorns
2 tbs vinegar
1. Preheat the oven to 190 (375 ).
2. Line muffin tray with cupcake liners.
3. Sift together the flours, cocoa, baking soda, salt and sugar into a bowl.
4. Measure and mix together the oil, water, vanilla, and all spices.
5. Pour the liquid ingredients into the bowl and mix the batter with a fork or a whisk.
6. When the batter is smooth, add the vinegar and stir quickly.
7. Stir until the vinegar is evenly distributed throughout the batter.
8. Evenly divide the batter into the cupcake liners, no more than half way.
9. Bake for 18-20 minutes, or until a toothpick comes out clean.
10. Allow cupcake to cool completely before glazing.
Makes 12 - 14 cupcakes
Spicy Chocolate Glaze
200g / 7 oz dark [bittersweet] chocolate, chopped
1/4 cup hot water
1/4 cup cream
1½ tsp ground cinnamon
½ tsp ground sichuan pepper
¼ tsp ground ginger
1/4 tsp ground cloves
1/4 tsp ground pink peppercorns
1 ts vanilla extract
1. Carefully melt the chocolate, either in the microwave or on the stove with a double boiler.
2. Stir the hot water and hot cream, the spices and the vanilla into the melted chocolate until smooth.
3. Spoon the glaze over the cupcakes immediately, while glaze is still hot.
4. Refrigerate the glazed cupcakes for at least 30 minutes to set the glaze.
