Chef Tyler Florence takes acorn squash, cuts them in half, scrapes out the seeds, and roasts them at 350 degrees. He then adds cheese tortellini, a rich alfredo nutmeg sauce, parmesan cheese, sage, and extra virgin olive oil and roasts them again briefly.
Watch the video, and serve this delicious vegetarian dish in a bowl for lots of love from your vegetarian friends!
