The mornings are definitely getting cooler in god ole central Florida. It was a tiny bit chilly when I first took off on my run this morning, but my body warmed up a ½ mile into it and there was no problem.


Falls and winters always have off weather patterns here. We could be freezing in the morning, but during the peak of afternoon sun its usually warm enough to lay at the pool. This always makes getting dress for the mornings very difficult. Layers are key. That way you can start the morning in a sweater and be able to strip down to a tank top before the day is over.


Luckily, my run this morning wasn?t too cold and I was able to get a solid run in with my usual shorts and tank top.

For some odd reason I had more time then usual left over in my morning routine so this morning I felt like making something a little special for breakfast. I?ve been craving waffles all week, so I decided to get a little creative and came up with something yummy with left overs I had in my fridge..


Pumpkin Waffles


 


(Recipe makes 2 large waffles)



1 cup Hodgen Mills Buttermilk Whole Wheat Pancake Mix
1/3 cup Milk
¼ cup Egg Whites
1/3 cup canned Pumpkin
1 tsp Cinnamon
1 tsp Pumpkin Spice

I mixed all of the ingredients together until I got a batter consistency. I separated the batter into two equal parts and let the waffle iron do its work.


I topped my waffles with some sugar free syrup and half of a microwaved cinnamon apple. I thought the apples were a perfect topping for the autumn themed breakfast.



This definitely satisfied my waffle craving. J I wish I had more time in the morning to make these every day for breakfast.


Time to start my work day. I have plans for lunch out with my cousin & his wife at Mr. Pita. I?m still on the borderline of what I?m going to get. They have an All You Can Eat Pita Bar that my cousin was raving about, but I?m not sure how I feel about that. When anything involves a ?bar? I tend to over indulge myself. I think sticking with the menu will be the right choice for me. J
