Oh my goodness...the way my house smelled while this was baking in the oven was absolutely amazing! This Apple Downside Up Cake was easy and fast to make! I used "special" apples in my cake, but you will have to check my blog tomorrow to see why they are special! When you are baking this, watch it carefully. The recipe says to cook for 25-30 minutes, but mine was done in half the time! This would make a perfect Brunch cake!!!!Apple Downside Up Cake

2 tbsp Butter
2 tbsp Butter
1/4 cup Packed brown sugar
2 medium Apples, sliced
2 cups Buttermilk baking mix
2 tbsp White sugar
1 tsp Ground cinnamon
1/4 tsp Ground nutmeg
1 Egg
2/3 cup Milk
Directions:Preheat oven to 400 degrees. Melt butter in a 9 inch pie pan while oven heats. Remove from heat.
Sprinkle the brown sugar over the melted butter. Arrange the apple slices over the brown sugar. In a medium bowl, stir together the baking mix, sugar, cinnamon and nutmeg. Add the egg and milk, beat with an electric mixer until smooth. Spoon batter over the apples. Bake in the preheated oven for 15 minutes or until a toothpick inserted comes out clean. Invert cake onto a serving plate while still hot. Serve with ice cream or whipped topping.
