A few days ago, while visiting the lovely Dragon's Kitchen, I was reminded of a puff pastry pie I sometimes make. Well, since I always have emergency puff pastry in the freezer (really, the number of times it saved me with a quick and easy lunch!), I decided to make some today.
Ingredients:
400 g minced beef
400 g button mushrooms
1 onion (diced)
1 medium sized zucchini (peeled and sliced)
2 tomatoes (sliced)
2 sheets of puff pastry (thawed)
200 g feta cheese (crumbled)
basil
oil
salt, pepper
In a hot, oiled pan saute the onion and beef for 5 minutes (stirring to separate the meat). Add the sliced mushrooms and cook until all the water from the mushrooms has evaporated. Season with salt and pepper.
Roll out the puff pastry and place it in two tart pans, or one larger pan lined with baking paper. Layer the meat and mushrooms on the pastry. Arrange the zucchini slices on top, and then the tomatoes. Sprinkle the zucchini and tomatoes with salt and basil. Crumble feta cheese on top. Bake in a preheated oven (180°C/350°F) for an hour or until the pastry turns golden.
