Here is a yummy dinner that can be frozen and used later on. Perfect for those cold winter nights! :)

First lets start off with the Crock Pot Shredded Chicken:

6-12 Boneless, Skinless Chicken Breasts (Use as many as you want)
2 C. Water
1 1/2 tsp Salt
1 1/2 tsp Pepper
1 1/2 tsp Garlic Powder
3 Tbsp Butter

Place the chicken breast in the crock pot. Mix water and spices together and pour over the chicken. Cook on a low setting for 8-10 hours. Remove chicken breast and shred with a fork. At this point you can put in baggies and freeze until needed for recipes. It is great for casseroles, quesadillas, pizzas, burritos, pastas, soup, etc. You could also heat with some BBQ sauce for hot BBQ Chicken Sandwiches. (You can also use the juices that are left from cooking the chicken to make a broth).

To make Chicken and Dumplings:

4 C. Water
2 Bullion Cubes
2 C. Bisquick Mix
2/3 C. Milk
1/2 C. All-Purpose Flour
1/2 C. Cold Water

Combined shredded chicken along with broth in large pot. Pour in water and add bullion cubes. While this is simmering in a bowl, stir together bisquick mix and milk until smooth. In a separate bowl, sift together flour and COLD water until smooth. Stir flour mixture into soup; bring soup to a rolling boil.

Roll out bisquick dough and cut into strips. Drop into the boiling water neatly around the chicken. Reduce heat to a simmer and cook uncovered for 10 minutes. Then cover and cook for 10 minutes more. (Sneak a spatula under the dumplings to prevent any sticking to the bottom of the pot). Serve hot and enjoy!

Even though there is all ready a bread in this I like to serve with warm rolls. On this day I was short of time so I had some Sister Schubert's Dinner Yeast Rolls on hand. If you have not tried these rolls they are a must try!! They are mainly found in the South however, you can order them (here)! They only take 5 minutes to warm and are delicious!! She also has several other products.
