These past two weeks have been so hectic and if I think that the holiday season has not even started.....I want to run away! To top it all, on Monday my computer just "crashed". Dead....nothing not a flicker of light...just nothing. I went into panic mode for about 5 minutes and then realized that my panic is not going to solve this problem.......Well, a trip to the computer shop and the good news was that it was just an error in the operating system. 4 Hours later.....and I was on line again, Yeah!!!!!!
I had a catering job on Tuesday....not many people, but quite an elaborate menu! I am glad to report that I actually made a profit this time!
On Saturday is our church's Spring Fair and my house is the local storing place for all the games, prizes etc. It is chaos to say the least and I cannot wait for Monday to just get everything back to normal! The excitement however is tangible in this house with more and more people stopping by to drop off things and my children trying to twist my arm to make or bake just "one more thing" for their little stall.
In the meantime I got some baking and cooking done in between all the other errands and today I share with you this dead- easy recipe for Chocolate Squares. We grew up with these delicious treats, but forgot about them until my sister found the recipe again the other day.. Here is what you need...
Ingredients
250gr butter
1kg icing sugar
1 cup good quality cocoa
2 eggs, slightly beaten
2 packets Marie biscuits - broken in pieces
Melt the butter in a big pot. When completely melted take the pot off the heat and add icing sugar and cocoa and mix well. Now stir in the beaten egg mixture and mix until smooth. Add the biscuits and fold it in until all the biscuits are covered with chocolate. Pour out into a pan and flatten the mixture with a spatula. When it has cooled down, cut into squares and keep in an airtight container. Delicious with a glass of chocolate milk!
