Culinary Countdown

In just a few short weeks I start culinary school, and about a year from now, I will officially have the title of chef. If anyone had told me a year ago that this is where I would find myself, I would not have believed them. It reminds me of the saying, "We make plans, and God laughs."

But clearly a year ago, I knew it was time for a change. So when the opportunity came around, it wasn't hard to recognize. I think we all look for signs--sometimes they are more like being hit over the head with a huge mallet:) But they are signs nonetheless. And if we don't listen, we're the ones who ultimately suffer.

The reason I know that this is the right path for me is not because there are bells ringing and lights flashing; rather it's because of the stillness and complete calm that came with the decision. Now this doesn't mean I don't have the butterflies that come with new beginnings. And it doesn't mean that I don't wonder what will happen after I graduate. But it does mean that I don't feel I have anything to fear--all I see is clear water, running in a steady stream. All I have to do now is maintain that focus, and keep moving forward.
