Although it’s tough to get up after a few days vacation, I managed to open my eyes before the 4AM alarm and lay in wait of the ominous chime telling me to get out of bed. If I don’t get up when the alarm goes off, Ted pushes me out so I may as well rise.
Once up and in the gym, the work out proved pretty good:
45 min. run + 35 min. weight w/out + 28 min. walk. The run was broken into 2 parts as one mile was spent running w/ Shane. The weight w/o included back, triceps, abs, yoga stretching to finish.
It was so good to be back eating what I’m used to: cream of rice w/ raisins, apple pie spice and a tsp of natural peanut butter. A protein shake with 2 oz of fresh blueberries and 1/2 a grapefruit. My tummy is smiling.
Just worked through the morning at a steady pace with typical “to-do” work. Didn’t get home for lunch because Sue had to meet up with Sam so I made the best of my trip to the store and bought:
Baby spinach, tomato, red bell pepper, tuna in a pouch, bean salad, f/f poppy seed dressing. It was a pretty big salad and worked out to be approximately 360 cal.; 30 protein; 50 carbs; 4g fat. Since I keep the fat low in my diet, I supplement with EFA’s (essential fatty acids) in the morning.
I also bought a green cabbage as I am going to turn a “Chicken Enchilada” recipe into “Tuna Enchiladas” however instead of using tortillas, I am going to wrap the stuffing in big cabbage leaves…. and Ted thought he was going to have pork chops tonight!
Dinner came out really good and I call it: Gluten Free Tuna Enchiladas:
Recipe on “Recipe” page.
In the meantime, our neighbors are heading back to Florida on Wed. (Snow Birds) and brought over some very nice flowers:
Thank you Betty Ann & Gene! Beautiful!
I also checked the progress on the wall. Ted had to make a phone call because they were building the wall so high. It would have hidden the new door and the new stampcrete! They were able to take out a layer or two. Almost complete, they just have to glue on the tops and clean up.

Gourmet Monday: LaBelle Is Back!
Added 03/11/2008 13:00:00
I love me some Patti LaBelle ! However, "Lady Marmalade" and her other megahits have nothing to do with this particular infatuation. Nope, I love the way this woman puts together a cookbook. I bought her LaBelle Cuisine cookbook ages[...]http://feeds.feedburner.com/~r/FoodLoversLike...

Gourmet Monday: A Fish Dish
Added 28/10/2008 02:13:00
Over the summer I tried out a recipe from Saveur magazine that I served at a dinner party, with really smashing results. The only thing is, it required broiling, so I had to turn on the oven in the middle of hotter-than-July July heat. Definitely a[...]http://feeds.feedburner.com/~r/FoodLoversLike...
