Yummy!! This potato salad is the absolute best and super easy!! :)

5 Lbs. Red Potatoes, unpeeled
6 Eggs (We like alot of eggs around here!)
2 C Hellman's Mayonnaise (My favorite brand of mayo--- without it I just don't think it tastes the same).
2 Tbsp Dill Pickle Juice
3 Chopped Dill Pickles (My fav are Claussen-- you can find them in the refrigerator section by the hot dogs. They are a little bit more pricey but so worth it!)
2 tsp Mustard
1 tsp McCormick Vegetable Supreme Seasoning
1 tsp Salt (Seasoned)
1/2 tsp Pepper
1 tsp onion powder

Place whole unpeeled potatoes in a large saucepan. Cover with water. Cover pan and bring to a boil. Simmer for 25 to 30 minutes, or until potatoes can be pierced easily with a fork. Drain and let cool until easy to handle. Cut unpeeled potatoes into halves or quarters, depending on size of potatoes. Chunks should be no larger than 1 inch. Place eggs in a saucepan with enough COLD tap water to cover completely by 1 inch. Bring to a ROLLING boil over HIGH heat. Once the water is brought to a rolling boil, PROMPTLY reduce heat to a lower medium boil and cook an additional 10 minutes for a ?hard boiled? egg. Remove from heat and IMMEDIATELY place eggs under ice cold water or in a bowl of ICED water to chill promptly to help yolks stay bright yellow. Chill for a few minutes in the cold water until the egg is completely cooled. This is an extremely important step which prevents the greenish ?ring? from forming on the surface of the yolk over time. If the egg is not chilled immediately after cooking an unsightly dark greenish ring will eventually appear on the outside of the yolk. To peel...crack on all sides, roll egg between hands to loosen shell,and remove shell. Cut eggs into small chunks about a 1/2 inch square. In a large bowl, combine potatoes, eggs and the remaining ingredients. Toss to blend. I think it tastes better the next day so I cover it and refrigerate it overnight. This way the flavors have time to develop. The next day right before serving I pull it out of the fridge and toss to blend and then it's good to go! :)
