Yesterday, it was quite cooler in the Salt Lake Valley here in Utah. We even had our first snow last night. I know, that's one thing that drives me crazy about living here. The snow come too early. However, the weather people all promise this coming weekend, we will be back to nice fall weather. Anyway, the cold temperature put me in the mood for chili. This recipe is the one I go to when I need chili fast. I love my mom's chili recipe, but it requires more time. I also usually have everything I need for this in my pantry. Basically you brown the beef and onions, dump a bunch of canned goods in it, and let it simmer for 30 minutes. It's quick and simple. I got this recipe a while back from a local television show called Good Things Utah. My favorite way to serve this is in bread bowls. If you serve it in bread bowls, you can get more servings out of this recipe. This chili warmed us all up last night.
Pronto Chili
1 can (30 oz) chili with meat and beans
1 can (15 ½ oz) kidney beans, undrained
1 can (15 ½ oz) pork and beans
2 cans (8 oz each) tomato sauce
1 onion chopped
1 pound ground beef
1 T packaged chili seasoning (if like spicy add 2 T)
Grated cheese for garnish
Brown meat and onion. Drain fat, if necessary. Add canned ingredients and chili seasoning. Simmer for 30 minutes. Serve hot, garnish with grated cheese. Yield 6-8 servings.
