Oh, how I LOVE pumpkin!!! I especially love pumpkin when it is incorporated into a moist, carby treat… specifically: pumpkin muffins. This morning’s Pumpkin Spice Pancakes tasted just like a pumpkin muffin– flavorful, a tad spicy, soft, and fluffy, but, of course, in a flat form… and made from scratch! :)


I’m usually messy in the kitchen…



The recipe that I used is mostly based off one from Allrecipes.com. My variations are italicized below.


Pumpkin Spice Pancakes


Makes 6 large pancakes  


Ingredients:



2 cups all-purpose flour
3 tablespoons brown sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground nutmeg
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon salt
1 1/2 cups milk
1 cup pumpkin puree
1 egg
2 tablespoons canola oil
2 tablespoons apple cider vinegar

Directions


1. In a separate bowl, mix together the milk, pumpkin, egg, oil and vinegar. Combine the flour, brown sugar, baking powder, baking soda, allspice, cinnamon, ginger and salt, stir into the pumpkin mixture just enough to combine.

2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.


I ate 2 very large pancakes with some Smart Butter and a little maple syrup. I would have drizzled more syrup on top, but Mal and I finished the bottle. :( While making pancakes, I sipped an iced coffee with milk and agave nectar. 


Mr. Mal and I are headed downtown to walk around and run some errands this afternoon. I think a glass of wine at an outdoor cafe is definitely on today’s agenda! Happy Saturday! :)
