I wasn’t in the mood to cook tonight, so I chopped up some veggies, tossed them with olive oil, ground pepper, and crushed garlic, and then roasted them in the oven for 20-25 minutes… and viola, dinner was served!


For the veggie mixture, I used 2 red potatoes, 1 green pepper, and 1/2 of an onion.


My plate topped with shredded cheddar…



 


Oven Roasted Veggies


How to: 



Chop veggies into small pieces (slice potatoes thinly)
Toss veggies with olive oil, ground pepper, and crushed garlic 
Place veggies in homemade tin foil tray (fold up sides of a piece of tin foil)
Cover tin foil tray with another piece, and close all four sides tightly 
Bake in oven for 20-25 minutes on 350*F (place on cookie sheet for easy removal) 



Dessert was the usual: Almond butter on Ezekiel bread with peanut butter and chocolate chip. As always, delish!
