Thank you all for your positive response to the Hangry Pants Food Drive! You are the best readers. Mark and I are amazed that people read and seem to enjoy what we write and just wanted to express our gratitude in some small way. The Food Drive will go until December 22, so pass the message on to everyong you know! Remember, one comment per person.
After school, a small amount of goldfish crackers and a nice run, I went to a Sipalda jewelry party. I bought cute earings for my nieces for Christmas. I hope they like them. I also learned that the ring finger on my left hand is less than a size five, but my ring finger on my right hand is a 5. Odd? Actually, I guess that makes sense. I’ve always suspected my right foot is slightly bigger.
On the way there I said, “I hope there are Pizza Strips,“ and guess what … there were! I was v. excited to munch on pizza. My first plate was one pizza strip, one tomato piece, hummus w/ broccoli, peppers, cauliflower and carrots. My second plate was more pizza!!!
I avoided the sweets for much of the event, but these little blueberry scones were cute and I caved.
Now, I chose the scone over a brownie because I know what the brownies taste like. I would guess they were Dunkin Heinz. I like them, but have had them plenty of times. The scones were from Whole Foods and I’ve always wanted to try them, but never wanted to buy a whole container. They were tasty, but now I know what they’re like and don’t have to be curious any longer.
Cookie of the Day: Ginger Chewies
As explained yesterday, each day until Christmas (or until I run out), I’ll feature a new cookie in my family’s cookie making routine. Yesterday was Pignoli (or pine nut cookies).
I found this recipe at yumsugar and tried it for the first time last year and boy did I love them! I don’t really like crispy gingerbread type cookies, but these are chewy, soft and reallllly good.
Now, the only thing I changed about the recipe below as that I did not make supersized cookies. I made smaller, regular sized cookies as to not overwhelm the other cookies on the tray.
(Super Sized) Ginger Chewies
From Elinor Klivans’s Big Fat Cookies
2 ¼ cups unbleached all purpose flour
2 tsp baking soda
¼ tsp salt
1 tsp ground cinnamon
1 tsp ground ginger
½ tsp cloves
¾ cup (1 ½ sticks) unsalted butter at room temp.
1 cup packed light brown sugar
1 large egg
¼ cup molasses
about ¼ cup granulated sugar
Position a rack in the middle of the oven. Preheat the oven to 350°. Line two baking sheets with parchment paper.
Sift the flour, baking soda, salt, cinnamon, ginger and cloves into a medium bowl and set aside. In a large bowl, using an electric mixer on medium speed, beat the butter and brown sugar until smoothly blended, about 1 minute. Stop the mixer and scrape the sides of the bowl as needed during mixing. Add the egg and molasses and mix until blended and an even light brown color, about 1 minute. On low speed, add the flour mixture, mixing just to incorporate.
Spread the granulated sugar on a large piece of wax or parchment paper. Roll ¼ cup of dough between the palms of your hands into a 2 inch ball, roll the ball in the sugar and place on one of the prepared baking sheets. Continue making cookies, spacing them 2 inches apart.
Bake the cookies one sheet at a time until the tops feel firm, but they are still soft in the center and there are several large cracks on top, about 14 minutes. Cool the cookies on the baking sheets for 5 minutes, then use a wide metal spatula to transfer the cookies to a wire rack to cool completely.
Makes 9-12 cookies. (I did not make giant cookies. I did smaller ones.)
Stevia News
I heard today that Stevia might be approved by the FDA soon and coke and pepsi are braced to release sodas with the sweetener asap. Well, I am after reading In Defnese of Food I am more cynical about the government’s role in approving and promoting foods, so I don’t really care about this news. I also think stevia is gross. It has a weird aftertaste and is oddly sweet. Maybe I tried the wrong brand or something. What do you think about this potential move by the FDA?
