There are times where you have to be creative. One of those times might be when a stove breaks down. I haven't been able to use the stove for the last week or so. Hurley and I have been getting creative in terms of what kind of dishes to make. I have been using the George Foreman Grill to cook up meats and sandwiches. Last night I came up with the idea of making a flatbread. I asked Hurley what I should do, and he suggested to grill some chicken and put it on the flat bread along with some tomatoes and fresh basil. I took the idea and ran with it. This is one Spicy Chicken Flatbread that you will not regret making! The flavors are bold yet spicy.
Spicy Chicken Flatbread
2 whole wheat pita breads
1 cup grilled chicken* cubed *click on the link from a previous recipe that used grilled chicken
1/2 cup plum tomatoes cubed
2 tbsp extra virgin olive oil
2 tbsp your favorite tomato sauce
1/2 cup fresh basil chopped
1 tsp fresh garlic minced
1/2 cup mozzarella shredded
2 tsp Italian Seasoning by McCormick
1 tsp onion powder
1/2 tsp black pepper
Parmesan Cheese
Red Pepper Flakes as a topping
Pre-heat the oven at 350 degrees.
Place the whole wheat pita breads on a cookie sheet. Pour about a teaspoon of extra virgin olive oil onto both pita breads. Spread out the olive oil evenly on the pita breads. Place some fresh garlic on the pita bread spread out evenly along with some of your favorite tomato sauce. It does not have to be a lot of tomato sauce, a small spoonful will do. Make sure to spread the sauce out.
Sprinkle the shredded mozzarella cheese on top of the pita bread then top each pita bread with an equal portion of the grilled chicken, plum tomatoes, and fresh basil. Season the flatbread with Italian seasoning, onion powder, and black pepper. Lightly top it with some Parmesan cheese. Bake until the cheese melts and turns golden which should take about 5-10 minutes.
Once it's ready to be served, top the flatbread with some red pepper flakes. If you cannot handle heat very well, you can omit the red pepper flakes.
