Hey yall!


Happy Friday!! Well, it’s not really Friday for me since I have to be at work in the morning at 7, but you know! Here are my eats:


For breakfast I had a SUPER creamy and thick bowl of oatmeal, due to the fact that the banana I used was like the size of my arm. It was HUGE—making my oatmeal so much creamier and delicious!

I used some dried cherries, a cup of silk, 1/2 cup oats, cinnamon, peanut butter and the mammoth banana. Yum!


Now in regards to lunch….I had a bit of a dilemma (well, not really at all actually). Adam was making staff meal for the day and he was making HOMEMADE PIZZAS. I repeat, the dough and everything! It sounded amazing, it smelled amazing and the thought of it was a whole lot better than my measly hummus sammie I had packed. So, I gorged myself on his goat cheese pizza with tomatoes, spinach and mushrooms. It was a-m-a-z-i-n-g. Seriously, I think it was the best pizza I’ve ever had. My mouth was so happy!

I had 2 1/2 of the 3 brick slices you see here. SOOOOO good!!!! I can’t even begin to describe actually. I also had this salad to get in some greens:

The only problem was that staff meal is served at 10:30 so I inhaled all this pizza before 11:00! Wow! Around 9:00, I had the yogurt and a couple almonds I had packed:

(I didn’t eat the pear or the carrots though)


Surprisingly, I wasn’t hungry again all day long. That’s like a world record for me. I didn’t need a snack and I was stuffed for the remainder of work and trip to the grocery store. I did snack on a pear in the car though just because it was there and really really really juicy. That pizza really did its job to keep me full!

Today was probably my first pay day in about two months, so I could finally go to the grocery store and stock up on some necessities. Some have asked if we have a Trader Joes—-we don’t. We don’t even have a decent health food store here in Vero Beach. Publix is all I get! Oh well, it helps me save $$ I suppose and at least they have freshly ground peanut butter!

For dinner, I just had something light because I STILL wasn’t very hungry! I had one of Sammie’s “messes” (LOVE these!) with a cup of greek yogurt, cinnamon puffins, an unsweetened applesauce and a spoonful of peanut butter. On the side, I randomly had an organic turkey hot dog dipped in ketchup.

This dinner was perfect for me because it was light and felt good to my body after all that grease at lunch. But boy, was that grease ever amazing! I didn’t exercise today since it was the daily deep clean day of the kitchen and I feel like I burn like 500 calories at least scrubbing the floors, polishing everything in sight and washing all the bath-tub sized mixers. I’m always exhausted when I leave!


For “dessert” tonight, I had a bowl of Annie’s Bunnies and a few berries. Yum!

Speaking of work, here’s my work recap! I really hope this new once daily recap post works with yall….my days are just so crazy that I only get to sit down at my laptop when I get home from work and everything. I’m sure yall understand! :)


Right when I got to work, I got started on MORE yellow and chocolate chiffon cakes for the wedding cake because we underestimated our batter yesterday. No pictures of me with my whole body in the batter, but it was exactly the same thing as yesterday—twice over. Fun, but it is soooo time consuming because you have to scale everything out (which takes about an hour) then mix it, whip the egg whites separate, fold everything in by hand…..yada yada yada. At least it tastes good!


After all that cake baking madness, it was mid-morning and I started on yet another pumpkin pie:

And pumpkin whoopie pies (these are selling like hot cakes apparently!). I used a really simple buttercream recipe to fill them—-12 oz shortening, 1 lb powdered sugar, 1.25 oz egg whites and a ton of cinnamon. Mix on high until light and fluffy! And yes, I use shortening. It’s most likely not trans fat free—I have no idea. I don’t work at Whole Foods or a health food store over here!

After all that was done, I made another gigantic batch of icing for the wedding cakes:

And I started to work on crumb-coating the top tiers. Wedding cakes may sound really awesome, but they are for some people and not others. Sadly, I really don’t enjoy icing cakes like that as much as I enjoy baking bread. Actually, I really don’t like it at all. I have zero patience and everything has to be absolutely perfect. Oh well, it’s all for the experience!

When I finished crumb coating some tiers, I started on the hour long deep clean. Fun times! Tomorrow we are putting the finishing touches on the wedding cake and taking it to the wedding site. Pictures to come! We are also making more bagels so I’m psyched about that!!
