1. About 1 ½ years ago I lost 40 pounds by doing weight watchers. It hasn?t been easy keeping the weight off with my love for cooking. However, I may go up and down slightly but for the most part I have learned proper portion control and a few lifestyle changes, I can keep the weight off.
2. I work part-time for a local newspaper covering city government.
3. My youngest child and only daughter has a genetic disorder called turner syndrome. In addition to that, she was recently diagnosed with high functioning autism and ADHD. Every day is a challenge with her but there is also not a day that she doesn?t bring joy into our lives.
4. I love the Twilight books and will be seeing the movie this weekend.
5. I have lived in Utah my entire life.
6. I am a huge Country music fan. My favorites include Rascal Flatts (been to their concert), Keith Urban (been to his concert), Diamond Rio (been to their concert), Taylor Swift, and Carrie Underwood.
7. I love Dancing with the Stars. If I could be anything else in this life, it would be a Professional Ballroom Dancer. I love to dance and think that it would be a blast. However, I would never trade being a mom to my kids for that. I?ll just have to follow my other passion for cooking.

Now on to the recipe! This recipe is one of my absolute, all time favorite roll recipes. This recipe comes from my mom and I'm not sure where she got it, but she's been making them as long as I can remember. These rolls to often make it to the Thanksgiving dinner table. So if you are looking for something to make for next Thursday on Turkey Day, these would be wonderful. I will be making them again this year. Now these rolls aren't hard to make, but they do take time letting the dough sit in the fridge and letting the rolls rise. Let me tell you though, they are well worth the wait. These rolls turn out so tender and delicious, you'll be in heaven! This recipe is good to use for Thanksgiving because you make the dough the night before and put it in the fridge. Then in the morning you can roll them, put on your orange mixture, shape them, and leave them. These babies have to sit for 3-4 hours to raise. I can usually cook them after 3 hours. These rolls are also great to serve at a luncheon, baby shower, or breakfast. The aren't quite as tender the second day but still taste fabulous. This is what the dough looks like before it goes in the fridge. I also always mix it by hand with a wooden spoon.
½ cup warm water
Combine water and yeast and let sit.
Melt
½ cup margarine or butter
½ cup sugar
1 cup hot water
2 tsp salt
Combine butter mixture with yeast mixture.
Add
3 eggs well beaten
4 to 4 ½ cups flour
Let dough sit in refrigerator in fridge overnight in a covered bowl. Dived dough into two balls. Roll each ball out to rectangle.
Melt ½ cup butter and add ½ cup sugar and the rind of 1 orange. Spread mixture over both rectangles. Roll up dough from long size. Cut each roll into 12 pieces and place in greased muffin tins. Let rise 3 to 4 hours. Bake at 375 degrees for 10 to 12 minutes
Top rolls with icing made from powdered sugar and orange juice. (I just use the juice from the orange I got the rind from)
